Chicken Enchilada Pasta

Introduction

Here's my first success! I've made this before, actually a couple times but this time I took pictures to share with you. It's called Chicken Enchilada Pasta and seriously it's the best thing you will ever eat! I got this of pinterest awhile back and it was the first thing I made from there. So I'll stop talking and just give the recipe, that's the important part anyway!

Ingredients

2-3 chicken breasts, cooked & shredded (the original post suggests a rotisserie chicken but I just used regular chicken)
2 tbsp. olive oil
2 garlic cloves, minced
1 medium onion, diced
1 red pepper, diced
1 {4 oz.} can diced green chiles
1/2 tsp. salt
2 tsp. chili powder
1 tsp. cumin
2 {10 oz.} cans green chili enchilada sauce
2/3 cups red enchilada sauce
2 cups shredded cheese (I used Monterrey jack cheese pre-shredded from a bag!)
1 cup sour cream
Penne pasta

What to do

  • The first thing you need to do is get some water boiling and cook your pasta while you doing everything else  (PS I heard somewhere else on pinterest that if you put a wooden spoon in top of a pot of boiling water it keeps it from boiling over. It worked for me!)
  • The original recipe says to shred your chicken but I feel like that's a really tedious act and I don't have that much time so I mostly will just cut up the chicken like you see in the picture!




  • While you're cooking your chicken go ahead and chop up your veggies. I actually don't like red peppers so I just left those out as you can see. After you cook the chicken set it aside. Put the olive oil in the saucepan with the onions and cook for 3-5 minutes after that add the red peppers (if you use them) and the garlic and cook for another 3-5 minutes 




  • After the vegetables are cooked add the cooked chicken, the green chiles, cumin, chili powder, salt and enchilada sauces. Let all of that simmer at a little lower heat for 8-10 minutes 


  • When you waited the 10 minutes add the cheese and stir until it's all melted together. Then add the sour cream but DO NOT bring it to a boil. Keep it at a low heat otherwise bad things happen... Stir everything together till it's all heated thoroughly and add your drained Penne pasta and stir together 

 Voila! You've got the most amazing recipe ever! I swear it's still my favorite recipe I have found on Pinterest. You can add extra toppings like sour cream, avocado, green onions. I added none of it and it was still amazing so don't worry if you don't have them!
